Opcionalment podem afegir una mica de mantega o o nata l\u00edquida per homogene\u00eftzar el pur\u00e9.<\/li>\n<\/ul>\n<h3><strong>Elaboraci\u00f3 de l&#8217;escuma c\u00edtrica<\/strong><\/h3>\n<ul>\n<li>Hem hidratar les gelatines i dissoldre la gelatina amb un ter\u00e7 de l&#8217;aigua mineral.<\/li>\n<li>Tornar a incorporar amb l&#8217;aigua restant.<\/li>\n<li>Afegirem l&#8217;aigua amb gelatina en l&#8217;alm\u00edvar i el suc de taronja.<\/li>\n<li>Colarem b\u00e9.<\/li>\n<li>Disposar la barreja anterior en una sif\u00f3 amb la c\u00e0psula de N2O.<\/li>\n<\/ul>\n<p>&nbsp;<\/p>\n<h3><strong>Per emplatar<\/strong><\/h3>\n<ul>\n<li>Introduirem el pur\u00e9 de celer\u00ed dins d&#8217;un motlle, tamb\u00e9 podem fer un cercle amb el pur\u00e9 si no disposem de motlle.<\/li>\n<li>Dispodremos les costelles sobre del pur\u00e9.<\/li>\n<li>Enrotllarem el carbass\u00f3 que ja el tindrem tallat a l\u00e0mines longitudinals.
